Oh! my goodness. This was our twist on the egg recipe we posted yesterday. Instead of using the muffin pan, we used a mini meat loaf baking pan. The recipe is as follows:Generously grease the baking pan with melted butter. Line each cup with ham. We added chopped scallions, bacon, 4 Cheese Mexican Cheese, chopped green pepper and then eggs beaten to fill up the cups. We baked them in the oven at 400 degrees for about 20 minutes or so and it was absolutely wonderful. The plate is drizzled with maple syrup, sprinkled with garlic chives and pieces of maple bacon.
